What is GABA?
GABA fermentation is a special tea-processing process in which the tea is aged in a nitrogen-rich environment instead of oxygen. This allows gamma-aminobutyric acid (GABA) to accumulate in the leaves, giving the tea a smooth sweetness, deep flavor, and a mellow character without pronounced bitterness.
